Looks like cut is complaining because john.pot contains byte sequences
which are not valid for the current locale setting.
E.g., you use utf-8, but john.pot contains non-ascii characters in a
single-byte representation.

Try

LC_ALL=C cut -d: -f2- john.pot > passTest.txt
